Macarons are expensive because of two reasons: 1) They are very labour intensive and difficult to make and 2) The ingredients used to make them are costly.

How long will macarons last?

If refrigerated, macarons will last up to 7 days typically. Macarons are also a frozen product - if frozen after they are made, they can last up to 2-3 months in the freezer.

Are macarons supposed to be chewy?

Yes, macarons should be a little chewy. This indicates the macaron has been cooked well. If it's too crunchy it means it's been overcooked.

Are frozen macarons good?

Macarons, if made in bulk, need to be stored frozen. Freezing macarons is standard practice and doesn't lessen the quality of the macarons. Frozen macarons usually thaw within 30 mins.

How long do macarons keep?

If frozen, macarons can keep for up to 3 months. If refrigerated, they are fine for up to 7 days. Otherwise they can be left at room temperature for a few hours if in a cool environment.

Are macarons better the next day?

Not typically. They should taste the same the next day if refrigerated overnight.
