Looma's Carrot Cake Recipe

The most amazing carrot cake you'll ever taste!

Before You Start

  • Cake will result in 16 servings
  • Total prep time required is 20 mins
  • Total cook time required is 60 mins

Equipment Required

  • Baking tray
  • 10" Round cake ring, 2" tall
  • Mixing bowl
  • Baking paper
  • Cooking spray
  • Wooden spoon
  • Kitchen aid

Ingredients Required

  • 288g Flour
  • 450g Castor sugar
  • 2.5g Salt
  • 13.5g Cinnamon
  • 100g Walnuts
  • 78g Coconut shredded
  • 10g Baking powder
  • 95ml Veg oil
  • 165g whole egg
  • 125g Diced tinned pineapple
  • 315g Shredded carrot
  • 5g Vanilla essence
  • Ingredients for Cheese icing
  • 500g Philadelphia cream cheese
  • 180g Butter
  • 305g Icing sugar

Method for carrot cake mix

Step 1 - Combine all dry ingredients in a mixing bowl and mix.

Step 2 - Once dry ingredients are mixed well add all wet ingredients to the dry and mix well on speed 1

Step 3 - Lay baking paper on baking tray. Spray the inside of the cake ring around and place on baking tray.

Step 4 - Pour in cake batter.

Step 5 - Place cake into pre heated oven and bake for 60 mins at 160 degrees.

Step 6 - Once baked, allow to cool on wire rack before applying the icing.

Method for Cheese icing

Step 1 - Beat the butter and cheese on low speed while slowly adding the icing sugar.

Step 2 - Continue beating until light and fluffy.

Step 3 - Slice the carrot cake in half and apply a generous layer of icing around the cake and then place the other half on top.

Step 4 - Continue applying the icing on and around the cake until evenly covered.

Step 5 - Lightly dust the cake in cinnamon to give a nice look.

Once the cake is iced, place in the fridge for 2 hours to allow the cake to set. Once the cake has set it's ready for slicing. Enjoy!!!
